ADVENTURES IN AMERICA'S CULINARY UNDERBELLY
Call me Pig, it's not my real name, but it will do for our purpose. As you'll find out, I'm a research chef, not a professional blogger. My job has me reading about different ethnic food, tracking culinary trends, traveling the country, eating at independent restaurants, stalking street food vendors, and working in test kitchens. I do all of this, so ultimately, I can help educate corporations about what food trend is on the horizon. Maybe you can understand that when I tell you to avoid chains and eat local, it can be viewed as a conflict to how I make a living. This is why I use the pseudo name "Pig" it allows me to tell you all about the small amazing places I find off the beaten path, and still keep a level of anonymity needed to do my job.
A bit of advice before you explore this site, it is about my culinary exploration across America. I eat at hundreds of independent greasy spoons, food carts, and hole in the walls every year. If I list them here they were really good but may require a bit of adventure on your part.
